Weekend Recap & Some Random Updates

This weekend was filled with a lot of relaxing, a little shopping and a fun wedding.
The weather in Houston was pretty yucky but very much needed. It literally rained ALL day yesterday. I do not think it ever stopped until after we went to sleep.

Saturday I went to the Galleria and Pottery Barn for a little shopping and Chris watched the Texas/OU game at Pub Fiction with some friends. That night we had been invited to go on a Sunset Cruise out of South Shore Harbor in League City for a pre-wedding party for our friends Adam & Christa who were getting married on Sunday. The cruise was from 6:30-9:30 and was a great idea for the bride & groom's family and friends to relax and spend time together before the big day!

Sunday we had intentions of getting up and going to church then to a Pumpkin Patch before heading to the wedding but it was a MONSOON outside! We just decided to stay home and rest before heading back down to League City for the wedding.

Adam & Christa's wedding was supposed to be outside but because of the rain it had to be moved inside. I know she was stressed and upset but it ended up being perfect and it was SO beautiful inside!! I am going to post pictures from their big day tomorrow but I just have to leave a few pictures and comments about their wedding venue. OH MY GOSH...I am in LOVE with this place!! It is called Butler's Courtyard and it is in League City, Texas. It is a really, really old bank building from the 1800's....the inside walls are brick and their are chandelier's hanging everywhere. I can't even explain what a cool venue this was for a wedding. Here are a couple pictures of the venue & I borrowed a couple of Adam & Christa from her Facebook page...

Now for a few random updates:
-Hubby and I have started looking at plane tickets for our 1 year anniversary trip next May (yes I know it is SUPER early but we are trying to get the dates booked and plane tickets bought early). We are planning on going to Greece and doing a Mediterranean Cruise thru the Greek Islands and Turkey. Well...plane tickets are OUTRAGEOUS!!!! Last week when I looked, they were about $1600 per person. This morning they were $4400 per person!! AHH!! This is only on Continental because that is pretty much all we fly. So, I started looking at other airlines and found some that are cheaper but they have 2 or 3 stops and you travel for practically 2 days. So, now I don't know what we are going to do. We are going to keep checking every day for the next several weeks and hopefully get lucky and find a good deal one day! Fingers crossed!! We have been talking about taking a trip like this for 4 years so this HAS to happen!!

-It's not too early to start Christmas shopping is it? Good, because I have officially started! :) I bought my first few gifts today and am feeling very good about possibly being completely done before December even gets here. I also have started looking at Christmas cards. This is our first year to send them out and I have found some really cute ones so I am really excited about this!

-I am leaving for Denver 1 week from today! I will be there for a week for work but I have a few friends who live there that hopefully I will get to see and can't wait to be in some cooler weather!

Homemade Pumpkin Granola



I saw this recipe on Pinterest this week and had to make it! I made a few changes and it turned out really good. But even better than how it tastes was the way it made my house smell! AMAZING! Enjoy!

What you will need:
-5 cups rolled oats (old fashioned oats)
-1 tsp. cinnamon
-1 tsp. nutmeg
-1 tsp. salt
-3/4 cup brown sugar
-1/2 cup pumpkin from a can
-1 individual cup of applesauce (the little individual cups you eat with a spoon)
-1/4 cup maple syrup
-1 tsp. vanilla extract
-1 cup dried cranberries
- 1 1/2 cups slivered almonds
-1 cup sunflower seeds



What to do:
-Preheat oven to 325. Spray a large baking sheet with non-stick spray and set aside.

-In a large bowl, combine oats, spices, salt, cranberries, almonds and sunflower seeds.

-In a medium bowl, whisk together brown sugar, pumpkin, applesauce, maple syrup and vanilla extract. Whisk until smooth. Pour wet ingredients into oat mixture and stir until the oats are evenly coated. Spread mixture evenly on baking sheet.

-Bake for 25-30 minutes. Remove pan and stir/toss granola then bake for an additional 15-20 minutes. Remove, let cool completely then store in airtight container.



**Serve granola with yogurt, milk or eat it plain.

The "Newlywed 15" diet & Steve Jobs

Remember in college when almost everyone gained the "freshman 15"? Well, I have gained the "newlywed 15." In the 5 months I have been married I have definitely put on some pounds. I have not been eating good and pretty much stopped working out/running so I completely understand why I have gained wait. Well, last week I went to a doctor appointment and got my yearly blood work done. First I got a call on Wednesday morning that my Triglycerides were really high...they were 280. Normal is 150. BUT, luckily they were only that high because I had eaten about 5 hours before the blood work. I had not fasted because I had forgotten I would have blood work done. SO, that made me feel a little better but they still wanted to re-do my blood work after I had been fasting for at least 8 hours so, I got it re-done and got the results back yesterday...my triglyceride levels are 186. They are still high, but not nearly as high as the first test. This was a pretty big wake up call for me. Having high triglycerides greatly increases your risk for heart disease and other health issues. The doctor said they were high but not high enough for them to put me on medicine or take any drastic measures. He said I just need to get back to exercising regularly and cut back on the carbs, sugars and high fat foods. Thankfully this is a fairly easy fix. I have known I needed to start eating better and start exercising again but I just have not done it. Now, I am going to do it.

I read something yesterday really stuck with me... I don't remember the exact quote but it was something saying that when you worry about something, that is pretty much all you do about it- worry. But, when you are concerned about something, that is when you take action. Well, I am officially concerned. I am a healthy (minus this issue), newly married 29 year old who wants kids eventually and a long life. So, it is time to make some serious changes.

Here are some of my goals:
-Exercise a minimum of 3 times a week, but my goal is 5 times
-Cut out the sweets bigtime. I eat entirely too much bad sugar.
-Cut back on the carbs...especially the white ones. I am not going to be unrealistic about this. I am still going to eat bread and pasta here and there. But, I am going to limit it when I can and instead of 2 pieces of bread at dinner, have 1. Stuff like that.
-Stop drinking a Dr. Pepper or Red Bull in the mornings. I usually have one or the other in the morning...I need caffeine and I hate coffee. I know everyone is going to say' "Drink more water". Well, I literally can not drink more water...I drink about 10 bottles of water a day, every day. I drink more water than anyone I know. I have that going for me :)
-Consistently take my vitamins. I have always been good about taking vitamins but I do tend to forget to take them sometimes or will not take them for a month or so, then start again. I need to consistently take them every day, every week.
-I drink alcohol a couple times a month and usually only have a couple drinks because I get sick easily so when I do drink, stick to low sugar options.
-Eat A LOT more chicken, fish & veggies!!!

Have any of you ever been in a similar situation? What did you do?
My hubby is on board too so that will make it easier. So, that's my story & my plan :)

Our Engagement Anniversary- October 2nd

I had intentions of doing this post ON October 2nd but that clearly did not happen. This past Sunday, October 2nd, was our 1 year engagement anniversary :) I promised my husband we would not have to celebrate that day every year but since it was the first year I talked about it all day and now I want to share the story here.

Saturday, October 2, 2010 started out like a lot of our Saturdays, we had brunch then spent the day just hanging out, him watching football, me reading and piddling around. We had made plans earlier that week to go up to Bentwater on Lake Conroe (about 45 minutes north of downtown Houston) and take the boat out and eat dinner at the Yacht Club in Bentwater on Saturday. The weather was going to be beautiful and we knew it would be getting cold soon so this was going to be our last trip to the lake until the Spring. Because we were going to be having dinner at the Yacht Club I knew I needed to dress nice so I wore a dress and he wore slacks and a button down shirt. We headed that way late afternoon, parked at the marina and Chris said we should go walk over by the pool because they had the area set up for a wedding. I kept saying that I did not want to go because I did not want to get in trouble. Chairs were already set up for a wedding and flowers were everywhere. I figured we probably should not go march ourselves right thru this future wedding spot. And my heels were already killing my feet...I wore the highest ones I owned that day. So, I was just complaining the whole walk..."We are going to get in trouble, Chris"..."My feet are killing me!!" Blah blah blah.
Anyways, we walk down the center aisle between all the wedding seats and up to the gazebo right on the water. It was such a pretty day, 70 degrees, breezy, not a cloud in the sky and we were at our favorite place- the lake. I had gotten Lasik 1 week earlier so my eyes were still kind of sensitive to sunlight so I was wearing my sunglasses and all of the sudden Chris trys to take my sunglasses off so I can see the water with my "new" eyes and the next thing I know he is down on one knee asking me to marry him!! Between my shock & tears I said YES! He put the most beautiful, perfect ring on my finger, stood up, kissed and hugged me for a couple minutes then said "Look who's here" and turned to look toward the clubhouse. I was crying so I could barely see but I could tell there was a group of people walking toward us. It took a couple seconds to realize who it was...it was my Mom, Step-Dad and some of my best friends!! Then, I noticed someone off to the side with a big camera snapping pictures of everything...it was my friend Jenny, from high school. They all had been there and watched EVERYTHING! They had been inside the clubhouse watching from the windows and Jenny had been hiding behind trees taking pictures. Chris had been talking with them all week and planning out all the details... I was in complete shock and NO idea any of this was going on. We all stood around talking, hugging and taking pictures by the lake then Chris told us he had reservations for all of us at the Yacht Club. We all had champagne and dinner and celebrated! It was an amazing day and night!!

Besides our wedding it was the best day of my life...it was so perfect and special. He knew how important my family & friends are and he knew I would want pictures of that special moment so we went above and beyond to make it extra special for me. Even now, re-telling the story I have tears in my eyes. There was some family and a few friends he wanted to be there but because they all were out of town it did not work out but there is nothing I would change about that day. Now, it is 1 year and 2 days later and we have been married for almost 5 months!! It is CRAZY how fast time has gone by. These are some pictures that Jenny took that day...

Tasty Tuesday- Sloppy Joe's

My husband has been talking about sloppy joe's for 2 weeks so I found my Mom's recipe in our family cookbook and made them for him last night. I am happy to report they turned out exactly how I remember them when my Mom made them! Whohoo! Here is the recipe:



What you will need:


1 lb. ground beef


1 tbsp. shortening


2 tbsp. flour


1 tbsp. brown sugar


2 tbsp. worcestershire sauce ( more or less depending on what flavor you want )


1 tsp. salt


1 tbsp. chilli powder ( more or less depending on what flavor you want )


1 small can of tomato sauce


Hamburger Buns


Optional Sides- Cheese, Sliced tomoato's, onions. I served mine with coleslaw and sweet potato fries.



What to do:
Brown ground beef in saucepan. After completely cooked, add all other ingredients and stir together. Cook on low for 20-30 minutes then it is ready to serve!

The Woodlands High School Class of 2001- 10 Years Later




This weekend was my 10 year high school reunion in The Woodlands. I graduated from TWHS in May 2001 and can NOT believe it has been 10 years! It was so fun to see so many old friends and new friends. The reunion was at The Woodlands Pavillion House of Blues VIP tent...there was food, drinks and great music. Here are a few pictures:
